Blueberry Coconut Magic Smoothie

This one is absolutely one of my favorites! Can’t beat a blueberry and coconut combo, it’s so delicious.

I am sneaking in a veggie here also (sweet potato), and boosting the smoothie with some great protein and fats (protein powder, seeds, nut butter). It’s a perfect quick meal! And note: toasted coconut flakes are a MUST as a topping :)

NOTE: when you shop for coconut milk in a can, try to choose a brand that contains only coconut and water. There are many cheaper brands out there that add stabilizer or even sugars to the canned milk, so make sure you read the labels. I’m tagging below my favorite brand- I find it has the perfect creaminess/ texture of the milk! (I know you can easily get it on Amazon in the US and UK; hoping I can find this brand in the Netherlands also!).


1/2 sweet potato, cooked and frozen

1/2 cup frozen blueberries

1/2 banana (fresh or frozen)

1/4 cup coconut milk (thick, from a can- this one is a great brand)

1 tbsp sunflower seeds

1 scoop of protein powder (or skip for a lighter version)

1 tbsp desiccated coconut

1 tbsp peanut butter

Suggested toppings: toasted coconut, other crunchy seeds.
